Brine that pork chop! Combine 2T salt, 1T brown sugar, 3 cloves garlic,
1 bay leaf and 2t peppercorns in 4c water with 2 thick pork chops and
allow to cure for 4-8 hours
For a roasted chicken with crispy skin, let the whole bird sit uncovered
in the fridge for 24 hours before cooking.
